Mandarin Orange Jello Salad



 
3 oz. box orange jello
1 C. boiling water
1/2 C. cold water
3.5 oz. box instant vanilla pudding
8 oz. tub cool whip
15 oz. can mandarin oranges drained, save a few for the top
8 oz. can crushed pineapple, drained
1 C. mini marshmallows (colored or white, I used colored)

In a bowl, whisk together the orange jello and boiling water until the jello is completely dissolved. Whisk in the cold water and then place in the fridge for 20 minutes. Remove and whisk in the pudding until smooth, return to the fridge for 10 minutes. Remove and fold in the cool whip until well combined. Fold in the oranges, pineapple and marshmallows. Place back in the fridge for 2 hours, decorate the top with additional mandarin oranges and marshmallows if desired before serving.
